Any new coupe bodies to add to the list? Hard to find what's listed. Are 1:1 cars raced in 1966 allowed (i.e., Chaparral 2F, Ford MK IV) allowed or just the available slot car bodies allowed? Thanks.....

To answer your question, yes any 1:1 car raced in 1966 (or a few years earlier) is okay.
The list above was assembled from the R&C race Tech Charts and all the information about current production bodies I could find - it was and is NOT intended to restrict body choices. Because it is an unfortunate fact that original vintage bodies from 4-1/2 decades ago are becoming very rare and expensive, I was thinking reproductions of the vintage bodies appearing in the Tech Charts (example: True Scale, ED, Anderson, Dilworth, etc.) would be okay too.
However, as Don Siegel has correctly pointed out, there were many more entries at the R&C races than show up on the Tech Charts, so who knows what other slot car bodies might have been there? The only hard-stop limitation is that you should not choose any bodies representing cars that did not yet exist in 1966 - a few years earlier than 1966 however is A-OK.
Not to be too picky, but both the Chaparral 2F and the Ford GT-40 Mark IV you mentioned in your question were 1967 cars... As an alternative, the original Ford GT-40 Mark I, GT-40 Mark II and "J" car are all 1966 or earlier.

Yes to all four; they all date to 1966 or earlier. Do you actually have examples of these bodies? I'd be interested in verifying the part numbers for the bodies charts.
The DuBro chart lists a "Cobra GT" as part number 24-26 and a "Riverside Cheetah" as part number 24-28, and there are photos of each.
The Classic "Cheetah" is part number 4423 and there is a photo.
The Rainbow Ford GT is another animal; there is so little documented information about Rainbow bodies that I couldn't even build a chart. As it turns out however, I have one photo of a Rainbow product, and it is a Ford GT:
Looks like part number 25-29. Rainbow advertised only once that I know of, in the January 1965 issue of Model Car & Track, on page 14:
And while the ad does mention a number of body styles, including a Lotus 30, the Ford GT is unfortunately not one of them. And of course, there are no part numbers...
