Instant Whole Orange Cake

Quick, moist, delicious - the perfect recipe for a lazy baker like me! 

1 big orange (skin and all)
185 grams butter, melted
3 eggs
1 cup of caster sugar
1½ cups of self-rising flour
 
Put the whole orange in a food processor and blend until pureed. Add other ingredients, process until well mixed.
 
Pour into greased, lined 18 cm cake tin. Bake in a pre-heated oven at 185 degrees for 50 mins. Turn cake out onto a rack to cool.
 
Enjoy!
 
Addendum: After allowing the cake to cool for five minutes, turn onto a wire rack, place a plate under the rack and pour a hot orange syrup evenly over the hot cake. No need for an icing.
 
Orange Syrup: Combine ½ cup caster sugar and ¼ cup orange juice in a saucepan, stir over heat without boiling until the sugar dissolves, bring to the boil, remove from the heat, add 1/2 tsp Cointreau and pour over cake.

Ron, I asked my wife to make your cake for my Birthday (August 1) and it is delicious. I've had some good cakes in my day but this one was awesome!

I don't know what temperature she baked it at but she did use extra large eggs to give it the firm or heavy cake texture I like. Ree Drummond (The Pioneer Woman) has a similar recipe but uses lemons.
