Instant Whole Orange Cake
Quick, moist, delicious - the perfect recipe for a lazy baker like me!
1 big orange (skin and all)
185g butter, melted
1 cup of caster sugar
1½ cups of self-raising flour
Put the whole orange in a food processor and blend until pureed. Add other ingredients, process until well mixed.
Pour into greased, lined 18cm cake tin. Bake in a pre-heated oven at 185 degrees for 50 mins. Turn cake out onto a rack to cool.
Addendum: After allowing the cake to cool for 5 minutes, turn onto a wire rack, place a plate under the rack and pour a hot orange syrup evenly over the hot cake. No need for an icing.
Orange Syrup: Combine ½ cup caster sugar and ¼ cup orange juice in a saucepan, stir over heat without boiling until the sugar dissolves, bring to the boil, remove from the heat, add 1/2 tsp Cointreau and pour over cake.
