Fat Johnnie's may actually be cleaner than Portillo's as far as prep equipment is concerned. Smaller place,
easier to clean. My buddie's kid worked at the Carol Stream Portillo's, and I was behind the counter once.
The cheap help did not go out of their way to "sanitize" back there. Still, they have to pass health inspection,
either way. One thing most people don't know, is that the grills are never cleaned. It ruins the "non-stick"
properties of the cooking surface.

I maintain that a Sabrett hot dog from a NYC street vendor (aka dirty water dogs) are the ultimate in Hot Doggery. YMMV

Been to Pink's and Ben's in D.C. Think I'll go to Joe Schmoe's Fri while I'm at BPR. A couple minutes away.
Would be a hoot to go to Martinsville for a race and a couple of those 'dogs.
