Not a recipe, but it's a good tip if you like avocados: I've always used lemon juice in my guacamole.

But it goes bad almost instantly even when refrigerated.

 

My friend Mike said, "Use lime juice instead of lemon". Now the guacamole stays good overnight.

 

If you are single like Cheater and only use half an avocado, remove the pit from the other half, squirt a few drops in the crater and place in a baggie in the refrig. Next morning, still green and good.

 

Try it. No more wasted avocado flesh.   :)

The trick is to put the seed back in it when you are storing it.

Personally, I leave my avocados on the shelf in the supermarket to prevent spoiling and to ensure none of that vile matter gets in my mouth. Just sayin... LOL.

Avocados are tricky. The best ones are "Calavos" (California avocados) or Haas, or "Avocados from Mexico".

They are small with dark colored skins and are ready to eat when soft. You can buy them before ripe when they are still hard, then wait a few days until ready. Placing them in a brown paper bag will accelerate the ripening process.

 

The giant bright green ones are a waste of your time.
