100 g Cocoa
200 g Butter, softened
400 g Caster Sugar
4 Eggs
1 tsp Vanilla extract
125 g Flour
1 tsp Baking Powder
150 g Dark Chocolate buttons (or bits)
100 g Milk Chocolate buttons (or bits)
100 g White Chocolate buttons (or bits)
Sift cocoa into a large mixing bowl. Add butter, sugar, eggs and vanilla.
Mix to a smooth paste.
Sift in flour and baking powder and then mix in chocolate.
Pour mixture into a large ( 9” – 230 mm ) square cake tin, lined with baking paper.
Bake in a preheated oven at 140°C for one hour.
Cool and cut into 16 portions.
Serve sprinkled with a light dusting of icing sugar, or with fresh raspberries and vanilla ice-cream.
TIP: Mix in some fresh raspberries before baking.
