These are Prime cuts wrapped in thick-cut bacon, sprayed with duck fat then liberally doused with ground pepper and a grinder I found at the market full of rock salt and rock garlic. That's it. On the grill and you guess how they tasted. Easy peasey.
I found and steamed some fresh asparagus and then roasted and mashed some lovely sweet potatoes. Layed a knob of butter on the mash and topped the steaks with a simple red wine mushroom sauce: 1lb of sliced mushrooms sauted in a pan for 5-6 minutes in a knob of butter. pour in 1/2-3/4 cup red wine of choice and let it evaporate for 2-5 minutes. You want to see it start to thicken up. Take off the heat and melt another knob of butter into the sauce. It'll make it rich and shiny. btw: A 'knob' is about the size of a large grape. Not exactly, but maybe 3-4 pats of butter...
