Here's a favourite of mine:
After thoroughly scrubbing and washing each potato, dry and pierce each potato with a fork in several places.
Lightly rub cooking oil over each potato.
Bake in air fryer (or conventional oven) for 45 minutes at 200°C
Carefully cut off top third of each potato.
Scoop potato flesh into a bowl and gently mash with a fork.
The scooped out top can be placed in the larger portion to increase padding and height.
In a pan lightly sauté one finely chopped green onion in some butter. Finely chopped green chilli, and capsicum can also be added.
Add to the potato mash.
Add some sour cream, cottage cream and grated Edam cheese.
Add salt, pepper, garlic granules, cayenne pepper to taste.
Place mixture back into potato skins.
Brush some melted butter on top, with a sprinkling of cayenne pepper.
Bake for another 20 minutes.
Serve with a topping of sour cream, sliced green spring onion, and sweet chilli sauce.
