If you are a fan of Asian food and Chinese in particular, the attached PDF files come from one of my favorite web sites: RecipeTinEats. com. The blogger described a techinque for using baking powder to tenderize the meat before stir frying. It's called 'velveting.'

 

I used the technique and the did both of the attached recipes. It tasted almost as good as restaurant quality. I blame the chef for the 'almost'...
