i came across some designs using the AFX International set and some extra sections. Could I get that track smooth enough for the high end cars?

That's pretty much all there was until the mid-'90s. So it depends on how high your standards are. There are some tricks to making it work with high level magnets, so if that's your intention, do some research on that. The big issue with any track is the level of the rails.

AFX track:
screw the track to your table, you need to countersink the little holes in the track sections
put boarders around the turns, cork for railroads tracks works
the 6"r turns may have high rails, carefully hone them down with a diamond stone
the electrical connections will degrade over time causing dead sections, you can jumper all the sections (pia), solder the connections (the solder will crack when track expand/contract, pia again), or just get a routed track
